SOB Salad (aka South of the Border Salad)

Okay, how many of you have been, or currently are, involved in a group that had a potluck event?  At first blush you think, "a fun evening with fellowship, a chance to sample new foods, and it won't be an expensive evening."  Then, the day of the event, you have a sick child, you have a teething child that needs constant comfort, and you have to pick up your husband at the airport from a business trip at 2 pm.  You now think, "OMG I have that potluck this evening, when am I going to find time to prepare something!"   I have a solution for you (I got this from my sister-in law).

Do you own a can opener?  Do you own a cutting board and knife?  Do you own a citrus reamer or juicer of some sort?  Then, you can make SOB salad!  This is basically an open and dump recipe.  And you make it ahead of time so you could make it the evening or morning BEFORE the event.  No stress the day of!  Check it out!

SOB Salad 



Ingredients:
2 cans whole kernel corn
2 cans black beans
2 cans diced tomatoes with chili peppers (or jalapeno peppers)
1 bunch green onions, finely sliced
1/2 - 1 bunch cilantro, leaves diced up (cilantro has a very distinctive taste so if you have never had cilantro before, I would put less in)
Juice of 1 lime
1/4 cup olive oil
1 Tbsp cumin
2 tsp garlic powder
1 tsp onion powder
1-2 tsp salt

Equipment Needed:
Can opener
Cutting Board
Knife
Citrus reamer or juicer
Liquid measuring cup
Casserole dish or bowl

Instructions:
Open the cans of corn, drain well, and place the corn in your casserole dish.  Next open the cans of black beans, drain, and rinse well, drain again, and place in the casserole dish.  



Open the cans of diced tomatoes/chilis and place in the casserole dish.  Next, add your green onions and cilantro.  In your measuring cup, measure the olive oil and add to it the lime juice, cumin, garlic powder, onion powder, and salt.  This is your dressing.  Mix well.

Add this to your casserole dish and mix contents well. This is it!  Just place the dish in your refrigerator for a minimum of 4 hours but up to a day and a half. so the flavors can blend.  Enjoy!

Oh Marilyn. When I first read this I thought you were talking about the other 'SOB' and I thought what is she on about? LOL I love these kind of salads. What a great idea. (By the way, not sure why it's called Coconut Ice. As long as I've known, it's just always been called that and it's always been pink and white. I'll see if I can find out.)

OK had to know what the SOB stood for. My mom used to make a dish my Dad ate in the Navy called SOS. I won't tell you what that stands for. South of the Border makes sense though. :-) My kids love this dish. It's the only way I can get them to eat black beans. Found you from the Sweet Spot linky party and am now a follower.
